Vegan Strawberry Ice Cream
Strawberry ice cream, more commonly known as strawberry ice cream, is one of the most common and preferred ice creams by people. The strawberries we cut, place them in the blender and start blending until a puree texture is obtained.

The next step is to pass the blended strawberries through a strainer, such as a chinois. This is to separate the substance well so that no foreign particles remain.

From the coconut milk, we separate about 150 ml from the 400 ml and from the first one, we mix it with the cornstarch.

With the rest of the coconut milk, we put it in a saucepan on the stove over low heat and add the vanilla extract and the sweetener. In addition, we also add the strawberries that were blended (it will only take a few minutes, we will turn off the stove before boiling).

When we turn off the stove, we stir and while we do this. Pour the old mixture of milk and cornstarch, stirring constantly.

Let it stand for a while, until the mixture is at room temperature. Then, put it in the freezer, but only for half an hour. After this time, take it out, stir it and put it back in the freezer.

Then we leave it for an hour and stir again. From this point on, the ice cream should be left for at least 3 hours, but every hour it should be removed and stirred.

Now all that's left is to enjoy the ice cream. The strawberries you set aside uncut. They are to add to the ice cream.

Notes on the ice cream
Some people usually include to the recipe of this vegan strawberry ice cream, some frozen bananas when blending the strawberries. This is done both to sweeten a little (since the banana is by itself, sweet) and to give more thickness to the ice cream and creaminess.
As for coconut milk, it is the most recommended, however, it can easily be substituted with another vegan milk that is thick. The latter must be a fundamental characteristic if you want your ice cream to be creamy.
