When you notice that the cream begins to thicken and sticks just a little to the spoon, stop the cooking process, as there is a risk of it cutting.

The next step is very simple, but at the same time very important, and consists of allowing the mixture to cool completely.

Once this is done, it is time to incorporate the crème fraîche and whip, which can be done either with an electric or manual whisk.
