Preparation steps

  1. Let's start by whipping the milk in a pot and then send it to the kitchen to heat. While this is happening, we can separate the egg whites from the yolks and also make the lemon zest.

  2. When the milk is at boiling point (it is about to boil), add the cinnamon (preferably in branches) and the lemon zest. We also have to lower the flame of the stove and let it rest for about 10 minutes.

  3. In another saucepan, we are going to put the cream, also on the stove and over low heat. As this happens, we add little by little the mixed milk from the previous step and let it cook.

  4. While the mixture is cooking, bind the egg yolk with the sugar and beat until no sugar crystals remain.

  5. Chop the nougat tablet in half, one of them we chop again into cubes and the other one we put aside. The nougat cubes that we chopped, add them to the yolks and sugar mixture and mix (preferably with a mixer). Until it is perfectly homogeneous.

  6. Next, mix the egg yolks with the nougat from the previous step and with the milk from step 3. Adding little by little and whisking, so that no lumps are formed at the same time, we guarantee a homogeneous mixture.

  7. When the mixture is ready, then let it rest and come to room temperature. Serve everything in a separate container ready to be taken to the refrigerator (not freezer) for 3 hours. After this time, move the mixture to the freezer for one hour.

  8. After this time, remove and stir little by little. With the other half of the nougat tablet we left, we chop into the smallest pieces we can and add to the ice cream. When it is finished, put it back in the freezer for another while.

  9. Then after a few minutes you will have your homemade nougat ice cream ready to serve.
