Preparation steps

Prepare the guava pulp:

  1. Wash and peel the guavas, then remove the seeds.

  2. Place the guava pulp in a blender or food processor and blend to a smooth consistency.

  3. If you prefer a coarser texture, you can leave some guava pieces without crushing them completely.

Prepare the base mix:

  1. In a saucepan over medium heat, combine the condensed milk, milk and sugar (if you decide to use it). Stir well until all ingredients are combined.

  2. In a separate bowl, dissolve the cornstarch in a little cold water until you obtain a homogeneous mixture without lumps.

Cook the base mixture:

  1. Pour the dissolved cornstarch into the pot with the milk and condensed milk mixture.

  2. Cook over medium-low heat, stirring constantly with a wooden spoon or silicone spatula, until the mixture thickens. This will take approximately 8 to 10 minutes. Be sure not to let it boil.

Add the guava pulp:

  1. Remove the pot from the heat and allow the base mixture to cool for a few minutes.

  2. Add the guava pulp to the base mixture and mix well until fully incorporated.

  3. Add the vanilla essence and mix again.

Cool and freeze:

  1. Pour the mixture into a freezer-safe container.

  2. Cover the container with cling film or an airtight lid to prevent ice crystals from forming on the surface.

  3. Place the container in the freezer and leave it there for at least 3 hours, or until the ice cream is firm enough.

  4. Once it is ready, it is time to serve and decorate. To do this, you can serve in cups, glasses, wafers or whatever you wish. You can also use complements such as ice cream of another flavor, cookies, liquid chocolate, etc.

Choose ripe and aromatic guavas: For the best flavor in your ice cream, select ripe and fragrant guavas. Ripe guava has a sweeter flavor and a smoother texture, which will improve the final result of your ice cream.

Use whole milk: Whole milk will provide a creamier, richer texture to your ice cream. If you prefer a lighter option, you can opt for semi-skimmed milk, but keep in mind that the texture may be affected.

Dissolve the cornstarch well: Be sure to completely dissolve the cornstarch in cold water before adding it to the base mixture. This will prevent lumps from forming and ensure a smooth, even texture in your ice cream.

Cool the mixture completely before freezing: It is important to allow the mixture to cool completely before placing it in the freezer. This helps prevent the formation of ice crystals and promotes a smoother texture in the ice cream.
